Pittsburgh: Quickly seared on both sides, cold raw and purple in the center.

Rare:  Springy to the touch, warm and red in the center.

Medium Rare: Red and hot in the center.

Medium: Pink and hot in the center.

Medium Well: Grayish pink and slightly dry.

Well: hard gray and dry
